SWEET POTATO PIE 
1 c. white sugar
1/2 stick butter
2 eggs
1/2 tsp. cinnamon (opt. or use pumpkin pie spice)
1 unbaked pie crust
2 c. mashed sweet potatoes
1 lg. can evaporated milk
1 tbsp. vanilla

Mix all ingredients and put in unbaked pie crust. Bake in 350 degree oven for 1 hour. Remove from oven and top with the following meringue.

MERINGUE:

2 tbsp. sugar
1 tsp. cornstarch
1/2 c. water
3 egg whites
1/8 tsp. salt
1 or 2 drops vanilla
6 tbsp. sugar

Mix and cook the sugar, cornstarch and water until thick and clear. Cool. Beat egg whites, vanilla and salt to soft mounds, adding the 6 tablespoons sugar as you beat. Beat in cooled mixture and beat to stiff peaks. Place on top of baked pie and return to oven and bake until brown.
