CHICKEN SUPREME 
3 c. cooked diced zucchini
1 1/2 c. chopped cooked turkey or chicken
1/2 c. chopped onions
1/2 c. chopped mushrooms
1/2 c. chopped celery
1/2 c. chopped red pepper
1/2 c. yogurt
2-3 tsp. soy sauce
2 tbsp. cornstarch
1 egg
1 1/2 c. skimmed evaporated milk or you may use skim milk
3 tbsp. butter
1/3 c. dry milk
1 c. shredded Cheddar cheese
3 c. dry stuffing mix with seasoned or homemade

In saucepan melt butter, saute onions, mushrooms, celery and pepper. Add egg and blend. Blend in cornstarch and soy sauce, slowly add milk. Cook until slightly thickened.

In lightly greased casserole dish mix half of stuffing, zucchini, chicken, cheese and creamed vegetables. Cover with remaining stuffing. Over top you can sprinkle 2 to 3 tablespoons Parmesan cheese. Bake at 350 degrees about 40-50 minutes.
