FRESH APPLE CAKE | |
4 c. peeled, sliced apples 2 c. sugar (1 brown, 1 white) 2 c. flour (1 whole wheat, 1 white) 1 1/2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 2 eggs 3/4 c. vegetable oil 2 tsp. vanilla extract 1 c. chopped pecans (or walnuts) Preheat oven to 350 degrees. In large bowl, stir together apples and sugar. Mix dry ingredients together in separate bowl. Add dry ingredients to apples and sugar; stir well. In another bowl, beat eggs, oil and vanilla. Stir egg mixture into apple mixture, blending until thoroughly moistened. Stir in nuts. Pour into greased 13x9x2 inch pan. Bake 36 minutes or until cake springs back when lightly pressed. Yield: 12 to 15 servings. Note: For a more healthy alternative, substitute 4 egg whites for the 2 eggs. Replace the 1 1/2 teaspoons baking soda with 1 tablespoon baking powder. Increase the apples to 5 cups. You can also experiment with decreasing the amounts of sugar and oil (replacing maybe 1/4 cup of oil with 1/4 cup water). Happy, Healthy Baking!!! |
