FRESH APPLE CAKE 
Apple Cake:

4 c. apples, peeled and sliced
2 c. sugar
2 c. flour
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 eggs
3/4 c. oil
2 tsp. vanilla
1 c. chopped pecans

Preheat oven to 350°F. In large bowl, stir together the apples and sugar. Add dry ingredients, stir well. In separate bowl, beat eggs, oil and vanilla. Stir egg mixture into apple mixture, blending until thoroughly moistened. Stir in pecans. Pour into greased 12 x 9 x 2 inch pan.

Bake 50 minutes or until cake springs back when lightly pressed. Serve warm with Apple Dessert Sauce. 12-15 servings.

Variation: Dice apples. Mix with sugar, cover and let stand for 1 hour before continuing. Omit cinnamon; use only 1/2 c. oil.

Apple Dessert Sauce:

1 c. sugar
1/2 c. butter
1/2 c. heavy cream or evaporated milk
1 tsp. vanilla

Stir together and bring to boil over medium high heat. Cook 3 minutes. Serve warm.
