DEEP DARK CHOCOLATE CAKE 
3/4 c. cocoa
3 c. sugar
2 c. flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
3/4 c. vegetable oil
1 c. hot coffee (may substitute 1 c. boiling water)
1 c. milk
2 eggs
1 tsp. vanilla extract

Combine cocoa, sugar, flour, baking soda, baking powder, and salt. Stir with a large fork or spoon. In a separate bowl, combine oil, coffee/water, milk, eggs, and vanilla extract. Beat on high for 2 minutes with electric beater. Add dry mixture into liquid a little at a time. Beat on high for 3-5 minutes.

Grease pan with Crisco, and flour pan. Pour mixture into pan. Pan should be 1/2 to 3/4 full. Bake on center tray of preheated oven for 35-45 minutes at 350 degrees. Cake is done when toothpick inserted in center comes out clean. Cool in pan 15 minutes, then remove cake from pan. Makes 2 nine inch cakes, or 1 medium size sheet cake.
