SHRIMP AND PASTA CASSEROLE | |
2 eggs 1/2 c. evaporated milk 1 c. plain yogurt 1/2 c. grated Swiss cheese 1/3 c. crumbled feta cheese 1/3 c. fresh parsley 1/4 c. fresh basil or 1 tsp. dried basil 1 tsp. oregano 1 clove garlic, chopped 9 oz. fresh angel hair pasta (deli) 1 lb. peeled shrimp 1/4 c. salsa 2-3 tbsp. butter 1/4 c. grated Monterey Jack cheese 1/4 c. grated Parmesan Grease 12 x 8 dish with 1 tablespoon butter. Spread 1/2 of uncooked fresh angel hair pasta in dish. Layer 1/2 of shrimp over. Spoon 1/4 cup salsa over. Layer remaining pasta. Mix first 9 ingredients and spread over pasta. Top with remaining shrimp. Dot with 2-3 tablespoons butter. Sprinkle with grated Monterey Jack cheese and Parmesan. Bake at 350 degrees for 30-40 minutes. Stand 10 minutes. |
