LENTIL SOUP | |
1 c. lentils 9 c. water 1 lg. onion 1/2 c. olive oil 7 sm. potatoes 2 bunches spinach 2 tbsp. salt 2/3 c. lemon juice Cook lentils in 5 cups of water. Bring to boil. Cover and turn heat to medium low for 1 to 1 1/2 hours. Brown onions in olive oil. Add 4 cups water, potatoes, spinach, salt, and sauteed onions to lentils. Cook 30 minutes on medium heat. The last 5 minutes, add lemon juice. |
