LENTIL SOUP 
1 lb. lentil beans
1 lg. onion, chopped
1 pkg. fresh spinach
4 stalks celery, cut in 2" sticks
Salt & pepper to taste
Olive oil to taste
Black pepper to taste

Pick out all rock and black beans from package. Rinse and put in large heavy pot. Cover with water and bring to a boil. Drain and cover with water again and bring to boil. Drain again (3rd) and add water to cover. Add the chopped onion and cook for about 15 minutes. Rinse spinach and add to beans, add celery. Cook for about 1 hour. After cooked, turn off fire and add olive oil and black pepper to taste.
