BANANA COFFEE BREAD 
1/2 c. shortening
1 c. sugar
2 eggs
3/4 c. ripe bananas, mashed
1 1/4 c. all-purpose flour, sifted
3/4 tsp. baking soda
1/2 tsp. salt

Cream shortening and sugar until fluffy. Add eggs, one at a time, beating well after each one. Stir in banana. Sift together dry ingredients; add to banana mixture. Mix well. Pour onto greased 9 x 9 x 2 inch pan. Bake at 350 degrees for 30 to 35 minutes.
