BANANA COFFEE BREAD 
1/2 c. shortening
3/4 c. mashed ripe bananas
3/4 tsp. baking soda
1/2 tsp. salt
1 c. sugar
2 eggs
1 1/4 c. sifted flour

Cream shortening and sugar until fluffy. Add eggs, one at a time. Stir in bananas. Sift together dry ingredients, add to banana mix; mix well. Pour into greased 9 x 9 x 3 inch pan. Bake at 350 degrees for 30-35 minutes. Can make in cupcake papers, also. Bake 18-20 minutes.
