BANANA COFFEE BREAD 
1/2 c. shortening
3/4 c. mashed ripe bananas
3/4 tsp. baking soda
1 1/4 c. sifted all-purpose flour
1 c. sugar
2 eggs
1/2 tsp. salt

Cream shortening and sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in banana. Sift together dry ingredients and add to mixture; mix well. Pour into greased 9 x 9 x 2 inch pan. Bake at 350 degrees for 30-35 minutes.
