BANANA COFFEE BREAD 
1/2 cup shortening
1 cup sugar
2 eggs
3/4 cup mashed ripe banana
1 1/4 cups sifted all-purpose flour
3/4 tsp. baking soda
1/2 tsp. salt

Cream shortening and sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in banana. Sift together dry ingredients; add to banana mixture; mix well. Pour into greased 9x9x2-inch pan.

Bake at 350°F for 30-35 minutes.
