ZUCCHINI BREAD | |
3 eggs 2 c. sugar 1 c. oil (Crisco) 1 tbsp. vanilla 2 c. grated or shredded zucchini squash 3 c. flour 1 tsp. salt 1 tsp. baking soda 1/2 tsp. baking powder 1 tbsp. cinnamon 1 c. nuts or raisins Beat eggs until light and fluffy. Slowly add sugar and beat well. Add oil and vanilla. Add zucchini. Sift and add dry ingredients. Add nuts, if desired. Bake in 3 medium loaf pans, greased, at 325 for 1 hour. Very good, also freezes well is very moist. It may seem like a lot of vanilla and cinnamon, but the flavor is very good. |
