APPLESAUCE CAKE 
2 c. sifted cake flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 c. shortening
1 c. sugar
1 egg
1 1/2 c. applesauce (I use my homemade)
1 tsp. vanilla
1 c. raisins
1 c. chopped nuts

Sift flour, soda, salt, and spices. Cream shortening with sugar until light and fluffy. Add egg and beat well. Add dry ingredients, alternately with the applesauce, beating until smooth after each addition. Add vanilla, raisins and nuts and blend. Pour into an 8 or 9-inch square loaf pan and bake at 350 degrees for 45-50 minutes or until done. Frost, if desired.
