CREAM OF CHEESE SOUP 
1/4 c. butter
1 carrot, chopped
1 onion, chopped
5-6 stalks celery with leaves
1/2 c. water
1/2 lb. mild Cheddar cheese
2 tbsp. flour
2 c. milk
1 1/2-2 c. chicken broth (either canned or fresh)

Cook above together until tender. Before serving stir in 1/3 cup sour cream.
