GLAZED DOUGHNUTS 
1 1/4 c. scalded milk
2 pkgs. yeast
1/4 tsp. sugar
1 c. mashed potatoes
1/3 c. butter, melted
2 eggs, beaten
1/2 c. sugar
1 tsp. salt
4 1/2 - 5 c. flour

Mix milk, yeast and 1/4 tsp. sugar first. Boil and mash potatoes. Mix in bowl with milk and yeast mixture, the sugar, butter and eggs. Then mix flour and salt. Don't knead, just mix well. Cover and let rise until doubled. Punch down and let rise again. Roll 1/2 inch thick. Cut with floured doughnut cutters. Fry. Top with a glaze.

GLAZE:

1 lb. powdered sugar
1 tbsp. butter, size of an egg
1 tbsp. cream or milk
1 tsp. vanilla

Add enough warm water to make a thin dip. Dip doughnuts while still warm. Good! It's work, but good.

5 batches make 18 dozen doughnuts. 1 batch glaze will glaze 18 dozen.
