PERSIMMON COOKIES #2 
3/4 c. butter & 1 c. sugar (cream)
1 egg, beaten
1 c. persimmon pulp & 1/4 tsp. baking soda (mix together)

Add to butter, sugar and egg. 2 tsp. baking powder 1/4 tsp. salt 1 tbsp. vanilla 3/4 c. chopped nuts 3/4 c. coconut, optional

Bake 12-15 minutes at 375 degrees.
