BLACK BOTTOM CUPCAKES 
8 oz. cream cheese
1/3 c. sugar
1 egg
Pinch salt
1 pkg. (16 oz.) chocolate chips

CAKE BATTER:

1 1/2 c. all-purpose flour
1 c. sugar
1/3 c. cocoa
1/2 tsp. salt
1/3 c. oil
1 tsp. vanilla
1 tsp. baking soda
1 c. water
1 tbsp. vinegar

Beat cream cheese and sugar until well creamed. Beat in egg and salt. Fold in chocolate chips (set aside).

Sift together flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla. Beat well.

Use small cupcake pans lined with paper liners. Fill 2/3 full with cocoa batter mixture. Drop 1/2 teaspoon of cream cheese filling on top of each. Bake at 350 degrees in preheated oven for 20 minutes or until they test done. Cool in pans for 15 minutes. Remove and place on wire rack to finish cooling.
