PUERTA VALLARTE CREPES 
12 slices (thin) ham
12 slices Jack cheese
12 flour tortillas
Ortega whole chiles
1 lb. sharp Cheddar

Roll ham, Jack cheese and a strip of chili pepper in flour tortilla. Place in a 9 x 12 inch baking dish. Pour cheese sauce over top of tortilla rolls. Bake at 350 degrees for 30-40 minutes.

CHEESE SAUCE:

1/4 c. butter
1 tsp. salt
2 c. milk
2 c. grated cheese
1/3 tsp. dry mustard
1/8 tsp. pepper

Heat and pour.
