CUCUMBER PEA SALAD 
3 short chunky cucumbers
1 c. cucumber pulp
Salt, pepper, paprika
1 c. cooked peas
1 c. minced chicken, cooked
2 tomatoes
Moisten with mayonnaise

Pare cucumbers. Cut slice from each end. Cut cucumbers in halves crosswise. Scoop out the centers, making thin shelled cups. Chill thoroughly. Combine pulp, peas and chicken; season to taste. Moisten with mayonnaise. Mix lightly with 2 forks. Fill cucumber cups. Stand each cup on a slice of tomato which rests on bed of lettuce. Garnish with paprika. Serves 6.
