SAVORY GREEN BEANS 
1 1/2 lbs. green beans
1/4 c. olive oil
1 garlic clove, crushed
1 tbsp. onion, chopped
3/4 c. green pepper, diced
1/4 c. boiling water
1 tsp. salt
1 tsp. dried basil
1/2 c. Parmesan cheese, grated

Leave beans whole or cut into 1 inch pieces. Heat oil and garlic in a heavy pan, add onion and green pepper. Cook slowly for 3 minutes. Add beans, water, salt and basil. Cover pan and simmer until beans are tender (about 15 minutes). Stir in half of cheese, turn the mixture into a serving dish, and sprinkle on the remaining cheese. Serves 6.
