THUMBPRINT COOKIES 
1/2 c. shortening, butter
1/4 c. brown sugar
1 egg yolk
1/2 tsp. vanilla
1 c. flour
1/4 tsp. salt
1 egg white
3/4 c. chopped nuts
Red jelly or colored powdered sugar

Mix shortening thoroughly with next 3 ingredients. Add flour and salt. Roll dough between palms of hand in 1" balls. Beat egg white slightly, dip balls into egg white then into nut meats. Then bake for 5 minutes in 375 degree oven. Remove from oven long enough to press each with thumb or spoon. Return to oven for 10 minutes. Cool on wire rack, place a bit of red jelly in thumb print.
