CREAMY RICE PUDDING 
1/2 c. rice
1/2 tsp. salt
1 qt. milk
1/2 c. sugar
2 eggs, well beaten
1 tsp. vanilla
Cinnamon

Cook rice and salt in milk for 30 minutes or until rice is soft. Stir occasionally, add sugar to eggs and beat until thick. Add vanilla. Slowly add mixture of egg to rice, stirring constantly. Cook and stir until thickened. Pour into a 1 quart baking dish; sprinkle with cinnamon. Cool and serve. Yield: 6 to 8 servings.
