CARROT CAKE 
3 eggs
2 c. sugar
1 1/2 c. cooking oil
2 c. grated carrots
1 lg. can crushed pineapple
1 tsp. vanilla
3 c. plain flour
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
2 tbsp. cinnamon
1/2 c. water
1 1/2 c. pecans

Cream eggs and sugar until smooth. Add oil, blend well. Add carrots, pineapple, and vanilla. Mix dry ingredients and add to the above, then mix in the pecans.

FROSTING:

1 (8 oz.) pkg. cream cheese
1/2 c. confectioners' sugar
Vanilla flavoring
Pecans
1/2 stick butter

Cream butter and cheese. Add sugar, vanilla and nuts.
