LAYERED SPINACH SALAD 
1 lb. fresh raw spinach, stems removed and shredded
1 1/2 c. chopped celery
1 med. cucumber, chopped
1 1/4 c. mayonnaise
6 slices crisp fried bacon, crumbled
1 green pepper
1 med. onion, chopped
1 (10 oz.) pkg. frozen peas, defrosted and drained
1 c. shredded Swiss cheese

In straight-sided glass bowl, layer in order given. Do not toss. Spread gently with mayonnaise, use more if needed. Scatter with cheese, then bacon. Cover tightly with plastic wrap and chill 12 to 24 hours. Cut into squares to serve. Do not toss.
