HOMINY CORN 
1 qt. wood ashes or 4 rounded tbsp. powdered lime
1 gal. water (4 qts.)
1/2 gal. dry corn kernels (2 qts.)

Put the ashes into a crock pot, pour in water and mix thoroughly then boil for approximately 30 minutes and stir. Continue stirring until the mixture stops bubbling then use a cheesecloth to strain the ashes out. If lime is used, just add to water, mix thoroughly and it is ready to use. Add 2 quarts of corn kernels or just what the water will cover and cook until the hulls loosen. Remove the corn from the heat and drain off the liquid. Wash the corn repeatedly until all of the hulls are gone and no taste of the lime or ashes is left. Always cook in an enamel or granite pot and never use a metal pot for this purpose.
