BONBONS DE COCO (Coconut Candy) 
3 c. shredded coconut
1 grated lemon rind
1 c. sugar
1/2 c. cream
1 tsp. vanilla
1 tsp. cinnamon

Mix together all ingredients. Pour mixture into a saucepan. Cook over low heat until the mixture is brown and the sugar is melted. Stir the entire time it is cooking. When ready, drop in small mounds onto a greased cookie sheet. Place in a slightly warm oven, 200 degrees F., until candy is firm but not hard (1 hour and 15 minutes).
