SPINACH
 
Fry 6 strips bacon until crisp. Remove from skillet; crumble and set aside.

Add 2 tablespoons flour to bacon drippings; blend thoroughly over low heat. Slowly add 2 cups milk, stirring constantly until sauce is smooth. Add: Pinch white pepper 1 tbsp. finely chopped onion

Cook 2 packages finely chopped spinach as directed on package. Drain dry. Add to cream sauce. Simmer slowly until thickened, about 10 minutes. Top with crumbled bacon. Serves 6.
