SMOKED SAUSAGE CASSEROLE 
2 tbsp. butter
5 c. green cabbage, chopped
1 med. onion, diced
1 (8 oz.) can stewed tomatoes
1 tbsp. vinegar
1/2 c. Parmesan cheese
2 tbsp. flour
Dash of black pepper
1 lb. Eckrich sausage

Melt butter in Dutch oven. Add cabbage, onions, and saute' 5 minutes. Stir in tomatoes and vinegar. Sprinkle cheese, flour, and pepper over cabbage. Pour into greased 2 quart casserole. Cut sausage into serving pieces. Arrange over cabbage mixture and push down. Cover and bake 40 minutes at 350 degrees. Serves 6.
