SMOKED SAUSAGE CASSEROLE 
2 tbsp. butter
5 c. chopped cabbage
1 med. onion, sliced
1 c. carrots, sliced
1 (15 oz.) can red beans, drained
1 (8 oz.) can stewed tomatoes
1 tbsp. vinegar
1/2 c. Parmesan cheese
2 tbsp. flour
Black pepper
1 lb. Ekrich sausage

Heat oven to 350 degrees. Melt butter in casserole over moderate heat. Add cabbage, onion and carrot; saute 5 minutes. Stir in beans, tomatoes and vinegar. Sprinkle cheese, flour and pepper over cabbage mixture. Stir in cut sausage into serving pieces. Arrange on top of cabbage mixture and push down. Cover and bake 40 minutes or til hot. Makes 6 servings.
