ROLLED OATMEAL COOKIES 
1 c. shortening
1 c. white sugar
1/2 c. buttermilk
1 tsp. vanilla
1 tsp. baking soda
2 c. oatmeal
2 c. flour

Roll out and cut out round cookies. Bake at 350 degrees for 10 minutes. Fill with raisin filling between the two cookies.

FILLING:

1 pkg. (4 c.) raisins
4 tbsp. flour
2/3 c. + 2/3 c. water
1 c. sugar

Grind raisins. Add remaining ingredients. Boil until filling thickens. Spread between cookies just before serving so they will not become soggy.

Date filling could be substituted for the raisin filling. Very good as well. Excellent cookie recipe for rolling.
