SCALLOPED POTATOES 
2 lbs. potatoes, about 6 med.
1/4 c. onion, finely chopped
1/4 c. cheddar cheese, shredded
1/4 c. bacon, crisply fried, crumbled
3 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1/4 c. butter
2 1/2 c. milk

Heat oven to 350 degrees. Peel potatoes and cut into thin slices. In greased 2 quart casserole, arrange potatoes in three layers, sprinkling each layer with onion, cheese, bacon, flour, salt, pepper and pats of butter. Sprinkle top with remaining onion, cheese, bacon, salt, pepper and butter. Heat milk to scalding and pour over potatoes. Cover, bake 30 minutes. Uncover and bake 60 to 70 minutes or until potatoes are tender.
