1 lg. cake of yeast 1 pt. warm milk 4 yolks & 1 whole egg 1/2 c. + 1 tbsp. sugar 1/4 lb. butter 1 tsp. salt 1/2 tsp. vanilla Grated rind of 1/2 orange About 7 c. flour Dissolve yeast in lukewarm milk; add 1 tablespoon sugar and 2 cups flour, cover and let stand in warm place about 1/2 hour. (Sponge mixture.) Beat eggs, sugar, vanilla, orange rind, salt and beat until light. Add this to the sponge, melt butter, add to mixture. Add remaining 5 cups flour. Knead about 5 minutes. Cover and let rise about 1 hour, or until double in bulk. Turn onto floured board. Pat with hands until dough is half inch thickness. Cut with doughnut cutter and let rise again. Drop in deep hot fat. Fry until done. When cool, sprinkle with powdered sugar. |
