PORK CHOPS IN CIDER SAUCE | |
4 lean center cut pork chops, about 3/4 inch thick 1 clove garlic, minced or pressed About 4 tbsp. Dijon style mustard 2 tsp. dried sage leaves, crumbled Pepper 1 c. apple cider or apple juice, divided 1. Cut a small piece of fat from the edge of one chop. Saute in medium-large skillet until the fat runs. Use to grease skillet or use 1 tablespoon butter. 2. Add garlic. Cook until golden brown. Add chops, brown on both sides. 3. Spread each chop generously with mustard, then sprinkle with sage and pepper. Repeat on other side of chops. 4. Add 1/2 cup cider. Cover and cook slowly for 15 to 20 minutes, turning occasionally. 5. Uncover, add remaining cider. 6. Cook rapidly until reduced to a sauce consistency. 7. Stir 1 tablespoon mustard into sauce. Pour over chops. Serve with the apples, if used. Preparation time: 15 minute. Cooking time: 30 minutes. Serves 4. |
