SWEET POTATO SOUFFLE 
3 c. cooked sweet potatoes
1/2 c. brown sugar
1/2 stick butter
1 c. sugar
2 eggs, whipped
1 tbsp. vanilla

Mash sweet potatoes. Mix with other ingredients and put in 9x13 inch baking dish.

TOPPING:

1/3 c. butter
1/3 c. self-rising flour
1 c. brown sugar
1 c. chopped nuts

Mix all ingredients and place on top of potatoes. Bake at 350 degrees for 30 to 40 minutes until brown.
