PUMPKIN CAKE ROLL 
2/3 c. pumpkin
3 eggs
1 c. sugar
3/4 c. all-purpose flour
1 tsp. lemon juice
1 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt

Beat eggs on high for 5 minutes. Beat in sugar. Stir in pumpkin and lemon juice. Set aside. In a separate bowl mix together flour, baking powder, cinnamon, nutmeg, salt and fold into pumpkin mixture. Spread into well greased and floured 15 x 10 x 1 inch pan. Bake at 350 degrees for 15 minutes. Turn out on a towel sprinkled with powdered sugar. Roll towel and cake together. Cool. Unroll for filling.

FILLING:

1 c. powdered sugar
1 (8 oz.) pkg. cream cheese, softened
4 tbsp. butter
1/2 tsp. vanilla

Beat until smooth. Spread over cake, roll, chill and slice. Keep refrigerated.
