SPANISH RICE 
1 c. uncooked rice
6 slices bacon or 1/4 c. butter
1 med. onion, chopped
1/2 med. green pepper, diced
2 to 3 c. tomato juice or stewed tomatoes
1 tsp. salt
Dash of pepper
1 c. water

Fry bacon cut fine, add onion and green pepper, saute a little. Add rice. Cook and stir over medium heat until lightly brown. Add juice or tomatoes. Mix well. Bring to a gentle boil. Cover tightly, lower heat. Simmer gently about 30 minutes. NOTE: Add more tomatoes or juice if too dry.
