PRUNE CAKE
2 1/4 c. flour
1/4 tsp. salt
1 tsp. cloves
1 tsp. cinnamon
1 tsp. allspice
1 tsp. baking soda
1 tsp. vanilla
1/2 c. shortening
1 1/4 c. sugar
2 eggs
1 c. buttermilk
1 c. cooked prunes, coarsely chopped (not canned)
1 c. chopped pecans (optional)

Sift flour and then measure into bowl; add salt and spices. In mixing bowl, put shortening and sugar; beat until well mixed. Add eggs and mix well, then add prunes and mix. Put soda in buttermilk; stir well. Alternately add flour and milk to other ingredients until well blended. Add vanilla and pecans; pour into oblong cake pan, 9 1/2 x 13 inches or approximate size. Bake at 350 degrees for one hour or until inserted toothpick comes out clean or cake springs back at touch.

We like this cake unfrosted, but you can add a glaze made with powdered sugar and milk or some of the left over prune juice.
