SPINACH PUFF 
1 pkg. (10 oz.) frozen chopped spinach
1 tbsp. finely minced green onion
3 eggs, beaten
1/2 c. sour cream
1 c. grated Parmesan cheese
1 tbsp. all-purpose flour
2 tbsp. butter
1/8 tsp. nutmeg
1/4 tsp. salt
Dash black pepper

STEP 1: Cook spinach according to package directions, adding onion to the pan as spinach cooks.

STEP 2: Drain well. Fold in the eggs and sour cream. Blend in the Parmesan cheese and flour. Stir in the butter, nutmeg, salt and pepper.

STEP 3: Turn into a well buttered 1 quart casserole or souffle dish.

STEP 4: Bake at 350 degrees for 25 to 30 minutes or until the center is set.

STEP 5: Half the ingredients for 2 servings. Baking time 15 to 20 minutes. Double the ingredients for 8 servings. Use a 1 1/2 quart casserole and increase baking time to 35 to 40 minutes.
