TEX-MEX CASSEROLE 
1 c. chopped onion
1 tsp. minced garlic
1 3/4 c. ground chuck
1 pkg. taco seasoning
1 (20 oz.) can kidney beans
1 (15 oz.) can tomato sauce
2 c. shredded cheddar
1 (8 oz.) pkg. Doritos
3/4 c. taco sauce
1/2 c. chopped scallions
Sour cream

Brown meat with onion and garlic. Drain fat; stir in tomato sauce and taco seasoning. Rinse and drain beans, toss with cheese. Grease 2 quart casserole. Layer with Doritos, add bean/cheese mixture, more chips. Spread meat mixture, more chips. Drizzle with taco sauce, sprinkle with cheese and scallions. Bake at 375 degrees for 25 minutes. Serve with sour cream.
