CREAM SPINACH CASSEROLE 
2 (10 oz.) pkgs. chopped spinach
2 c. sour cream
1 can cream of potato soup
2 eggs, beaten
1/4 c. Parmesan cheese

Thaw spinach and drain well. Add sour cream, soup and eggs to spinach and mix well. Pour into greased 2 quart casserole dish. Top with Parmesan cheese. Bake at 350 degrees for 25 to 35 minutes. Serves 6.
