SALMON MORNAY 
1 (1 lb.) can salmon
1 can French fried onion rings
2 tbsp. lemon juice
1 tbsp. butter
1 tbsp. flour
1/4 c. grated Parmesan cheese
Milk
Salt & pepper to taste
Cayenne to taste

Drain liquid from salmon and save. Remove bones and skin from salmon. Mix together the salmon, lemon juice and half of the onion rings. Place in a greased casserole dish.

To drained liquid, add milk to make 1/2 cup. Melt butter in a pan; stir in flour. Add salmon liquid, cheese, cayenne, salt and pepper. Cook over low heat, stirring until thickened. Spread sauce over salmon. Bake in 350 degree oven for 20 minutes. Top with remaining onion rings. Makes 4 servings.
