SPINACH CRAB MORNAY 
3 pkgs. frozen leaf spinach
1 clove garlic
2 tbsp. grated onion
6 tbsp. butter
4 tbsp. flour
3 c. milk
1 c. Swiss cheese, grated
1 c. light cream
2 tsp. lemon juice
Pinch of garlic powder
Dash of nutmeg
Salt & cayenne to taste
2 lbs. crabmeat (can use 1 lb. crab meat)
1 c. fresh bread crumbs

Cook spinach with whole garlic and grated onion. Drain, remove garlic, and finely chopped spinach. Transfer to a buttered 2 quart flat baking dish or 8 oven proof shells. Preheat broiler. Melt 4 tablespoons butter in saucepan, stir in 4 tablespoons flour until smooth. Gradually add milk, stirring constantly until smooth and thickened. Add cheese along with cream and seasonings. Cook over low heat until thick, about 10 minutes. Remove from heat and carefully fold in crabmeat. Pour mixture over spinach, sprinkle with bread crumbs and dot with remaining butter. Broil about 5 minutes or until browned. Yield: 8 servings.
