PEANUT BUTTER COOKIES 
1/3 c. Canola oil
2/3 c. honey
1 egg
1/2 c. natural peanut butter
3/4 c. brown rice flour
3/4 c. white flour
1 tsp. baking powder
1/2 tsp. salt (if peanut butter is unsalted)
1 1/2 tsp. juice or water
1 tsp. vanilla

Mix oil, honey and egg thoroughly. Blend in peanut butter. Mix in flour, baking powder and salt alternately with juice or water. Add vanilla and refrigerate for at least 1/2 hour. Shape into small balls and flatten with a fork dipped in sugar. Bake on a greased cookie sheet at 350 degrees for 10 minutes.
