HAM AND CABBAGE SOUP/STEW | |
1 tbsp. and 1 tsp. butter 1/2 c. diced onion 1 garlic clove, minced 8 oz. cubed cooked ham, 1 inch 1/2 c. sliced mushrooms 4 c. shredded cabbage 1 bay leaf 1/4 tsp. each caraway seed and pepper 2 c. water 2 packets instant beef broth and seasoning mix 1 tbsp. corn starch mixed in 2 tbsp. water 2 c. carrots, sliced In 5 quart saucepan or Dutch oven heat butter until bubbly. Add onion and garlic. Saute until onion is soft. Add ham and mushrooms, saute 2 minutes. Add cabbage, carrots, bay leaf, caraway and pepper. Saute 5 minutes longer. Stir in water and broth mix, bring to boil. Reduce heat; cover and let simmer stirring occasionally 30 minutes. Stir in dissolved corn starch until mixture thickens (5 minutes). Weight Watchers each serving contains 2 protein, 3 vegetable exchanges, 1 fat, 16 optional calories. |
