FRUIT SWIRL COFFEE CAKE | |
1 1/2 c. sugar 1/2 c. softened butter 1/2 c. shortening 1 1/2 tsp. baking powder 1 tsp. vanilla 1 tsp. almond extract 4 eggs 3 c. flour 1 (21 oz.) can apricot or cherry pie filling GLAZE: 1 c. powdered sugar 1-2 tbsp. milk Grease 15 1/2" x 10 1/2" x 1" jelly roll pan. Beat sugar, butter, shortening, baking powder, vanilla, almond and egg on low speed until well blended. Beat on high speed 3 minutes. Stir in flour. Spread 2/3 of batter in jelly roll pan. Spread pie filling over batter. Drop remaining batter by tablespoon on top of filling. Bake at 350 degrees for 45 minutes. Drizzle with glaze while warm. |
