SOFT GINGER COOKIES 
1/4 c. plus 2 tbsp. solid fat
1/2 c. sugar
2 tbsp. honey
1/2 egg (2 tbsp.)
1 tsp. baking soda
1 1/4 c. flour
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. ginger

Preheat oven to 350 degrees. Cream fat and sugar. Stir in honey and egg. Sift together dry ingredients; add to honey mixture. Chill dough, if possible. Roll into 1-inch balls; roll in sugar. Bake on greased baking sheet 8-10 minutes.
