STRAWBERRIES AND GREENS 
STRAWBERRY DRESSING:

1/4 c. red wine vinegar
3 tbsp. confectioners' sugar
1/2 tsp. salt
1 tbsp. celery seeds
1 tsp. paprika
2 tsp. dry mustard
1/2 tsp. white pepper
1 c. vegetable oil

GREENS:

1 med. head Romaine lettuce
1 head red leaf lettuce
1 pt. strawberries
1 med. purple onion

Wash lettuce and drain. Tear red leaf and slice Romaine into bite size pieces. Refrigerate in Turkish towel until serving time. Rough chop strawberries and thinly slice purple onion. Place onions and strawberries in the bottom of salad bowl with lettuce on top.

Chill salad dishes. Measure and mix in medium size bowl dry ingredients and vinegar. Whisk until blended. Add oil and whisk again. Refrigerate until serving. Pour half the dressing on lettuce mixture and toss, pour more as needed. Serve in chilled salad bowls. Serves 4 to 6.
