FAVORITE COLORFUL SCALLOPED
POTATOES
 
4 med. sized potatoes
1 green pepper, shredded
1 carrot, shredded
1 med. onion, chopped
2 tbsp. butter
Salt and pepper to taste
2 tbsp. flour
2 c. milk
Chopped parsley
1/3 c. shredded American cheese or mild Cheddar cheese

Peel and thinly slice potatoes. In a well greased 1 1/2 quart casserole arrange layer of potato slices, sprinkle each layer with green pepper, carrot and onion.

In a saucepan melt butter and blend in flour. Add milk and cook stirring constantly until mixture is thickened and smooth. Add parsley, salt and pepper and pour over potatoes. Sprinkle with cheese. Bake covered at 350 degrees 45 minutes; uncovered for 45 minutes more or until done.
