POTATO PUFF CASSEROLE 
1 (8 oz.) pkg. cream cheese, softened
5 c. hot mashed potatoes
1 egg, beaten
1/2 tsp. salt
Dash of white pepper
Dash of cayenne pepper
1/2 tsp. paprika
2 tbsp. minced chives (frozen will do) or 1/2 tsp. instant onion flakes

Combine softened cheese and hot potatoes, mixing until well blended. Add remaining ingredients, beat thoroughly and turn into buttered 1 1/2 quart casserole. Brush top with melted butter and bake uncovered at 350 degrees for 40 minutes. This potato dish is excellent served with any beef. 6 servings.
